2 6-8 ounce Haddock Fillets
Salt and Pepper to Taste
2 cups canned tomatoes
1 small bay leaf
3 cups Panko bread crumbs
1 tbsp butter
Place one fillet in a shallow pan; spinkle with salt and pepper.
Cook tomatoes and bay leaf for 5 minutes in small sauce pan; add salt and pepper.
Combine panko bread crumbs and butter; reserve 1/2 cup crumb mixture.
Add crumb mixture to tomato mixture, stir gently.
Spread tomato stuffing mixture over fillet in pan, place remaining fillet over stuffing.
Sprinkle with reserved crumb mixture.
Bake at 375 degrees for 30 minutes.
