Crab Stuffed Louvar


(4) ½" thick fillets of
Louvar or other white fish

  • 1 Stick REAL Butter
  • 1 small can chopped black olives
  • 3 tablespoons fresh chopped Parsley
  • 2 tablespoons chopped scallions
  • 1 Cup fresh sliced raw mushrooms.
  • 1 tablespoon Fresh grated Parmesan Cheese
  • 1 Sleeve of "Club" Crackers (Crushed)
  • Salt and fresh ground pepper to taste

Cooking Directions:

Layer fillets in a baking dish. Set aside


In a skillet sautee scallions, and mushrooms in a small amount of butter until soft. Remove from heat and add black chopped black olive, Parsley, Parmesan cheese, crumbled crackers, 1 stick softened real butter, and ½ pound fresh crab meat.


Blend all together. Mixture will be very moist. Pack mixture on top of each fillet approx ½ inch high.


Bake covered @ 425 for 15 minutes.  REMOVE COVER last 5 mins to Brown.
