Giovanni's Famous Shrimp Ceviche
1 lb. Fresh Peeled Raw Shrimp (Pink Shrimp are the best)
1/2 Bunch Cilantro
1 Tomato (Rough Chopped)
1/2 Purple Onion
2 Tsp Salt
Zest limes, lemon, orange and set zest aside
Into a large mixing bowl, add:
1 pound raw shrimp meat rough chopped
Juice of 4 limes
Juice of 1 lemon
Mix shrimp, lemon and lime juice thoroughly, cover and refrigerate for 1 hour then stir after 30 minutes.
While shrimp is marinating, fine dice the purple onion, tomato, cilantro and jalapeno then mix with the remaining lime, lemon, orange juice, salt and zest from all citrus.
Remove shrimp from refrigerator and drain off all lime and lemon juice then discard that liquid.
Add the shrimp into the tomato, jalapeno, cilantro, onion, orange, lemon, lime juices, salt and citrus zests.
Mix and fold all ingredients together.
Cover and refrigerate for 1 hour minimum, 12 hours maximum. Stir after 30 minutes.
Remove your Ceviche from the refrigerator just prior to serving. Dice and fold in the avocado.
Serve Ceviche with hot freshly fried corn tortilla chips dusted in kosher salt.
