California Wild Salmon

May 1st calls about an exciting day for all seafood enthusiasts as it means the California wild King Salmon season is finally here. Year to year catches vary, with some years providing an abundance of fish and others not so wildly abundant. The variance and uncertainty of not knowing what each season will bring about has caused incredible anticipation and demand over the years. The season is relatively short and typically lasts through the summer until about August or September, but it can really die off at any time as it has in the past.  Fortunately, thus far the 2015 California wild King Salmon season has offered up quite the catch!

California King Salmon and Alaskan King Salmon are very similar; both are known for being rich in omega-3 fatty acids and having very high oil contents, allowing them to be some of the richest salmon in the world. Due to high oil contents, the King species is typically much flakier and more flavor-packed than other common salmon species such as Sockeye or Coho. Local salmon range in size anywhere from 20 - 40 lbs. per fish, often times twice the size of farm-raised salmon sold in local super markets and even fish markets. The main differences [minimal] between California and Alaskan salmon are their locations which can alter swimming patterns and fat or muscle content. Additionally, California salmon are usually offered at better prices resulting in a much higher demand than compared to Alaskan. 

California King Salmon will unquestionably be to-die-for no matter how it's prepared; grilled, baked, raw, etc. A very popular method of preparation is roasting salmon atop a Cedar plank on the grill or in the oven to give the salmon a unique smoked taste. Also, the superior freshness of the local caught salmon of course allows it to be sushi grade and makes for some amazing sashimi, nigiri and sushi rolls. Many wonderful customers have suggested stocking up your freezer with this California King Salmon at your earliest convenience as the demand for these fish is out of this world, you could be out of luck before you know it - just a word of friendly advice.
