Fresh Alaskan Halibut
- blog created on April 28, 2017
Guess what? One of the most anticipated seasons in the fishing industry is finally here. Fresh Alaskan Halibut is back in stock. But before we get too far ahead of ourselves, let us tell you a bit about this interesting right-eyed, flatfish.
Halibut are born with eyes on opposite sides of the body like all other fish, and swim upright. When they reach about an inch long, the eyes gravitate to the same side, coloring fades from the eyeless, and now, bottom side (hence, "right-eyed, flatfish"), and the fish begin to swim sideways. They are found on the bottom of the ocean floor in water from 90 to 900 feet deep, but have been caught in depths up to 3,600 feet. Halibut take 8-11 years to fully develop, and female Halibut grow faster and larger than males. In fact, males rarely reach 100 pounds by full maturation. The largest Alaskan Halibut on record was caught in Dutch Harbor, Alaska in 1996 by Jack Tragis, and weighed 459 pounds. When we say females are larger, we mean larger.
We know.riveting information, right? Here is probably what you really wanted know to tempt your taste buds. The meat is lean and flaky, with an extremely mild and sweet taste, and the taste is at its absolute best when bought in season. The fish are line caught and kept cold on flake ice which is the best method for meat preservation; then the Halibut are flown down from Alaska and trucked straight to our Fish Market. That's freshness that is hard to beat. Frozen Alaskan Halibut is available year round, but there is simply nothing like the taste of the freshly filleted meat."
