Quite hard to find if you don't know where to look, Sand Dabs are the buttery little brother to Petrale Sole. One of the smallest in the Sole Family, Sand Dabs although thin when fillets, are firm enough to pan fry, or sauté. You'll find them only on upscale restaurant menus, and often served on the bone, then fillets are lifted off with forks by the server. Don't be afraid all the bones are attached to the spiny and remove quite easily. Truly a delightful and somewhat unknown delicacy.
