The "Skirts" or "epipodium" of the Abalone (The trim) are fully cooked, having been Blanched for about 30 seconds . These little morsels have the texture of a clam. and only need to be warmed for no more than one minute to be cooked. The flavor is delicate, so we don't recommend covering them in a heavy or overly seasoned sauce. Try sauteeing them simply in just butter, then toss with your favorite pasta! Or even chopping them up and making your own "Abalone Raviloi" Also make a great snack, just pop em in yor mouth and you won't be able to stop at one. Makes EXCELLENT Abalone Raviloi !
