Crab Stuffed Louvar
<< recipe list- (4) ½" thick fillets of Louvar or other white fish
- 1 small can chopped black olives
- 3 tablespoons fresh chopped Parsley
- 2 tablespoons chopped scallions
- 1 Cup fresh sliced raw mushrooms.
- 1 tablespoon Fresh grated Parmesan Cheese
- 1 Sleeve of "Club" Crackers (Crushed)
- Salt and fresh ground pepper to taste
Layer fillets in a baking dish. Set aside
In a skillet sautee scallions, and mushrooms in a small amount of butter until soft. Remove from heat and add black chopped black olive, Parsley, Parmesan cheese, crumbled crackers, 1 stick softened real butter, and ½ pound fresh crab meat.
Blend all together. Mixture will be very moist. Pack mixture on top of each fillet approx ½ inch high.
Bake covered @ 425 for 15 minutes.
