Abalone Stew

Abalone Stew  

 

  •  1/2 lb. Abalone Trim (Skirts) Chopped
  •  1/4 cup  oil
  • 1 cup  onion, chopped
  • 1/2 cup mushrooms, sliced
  • 1/4 cup green pepper, chopped
  •  7-oz. can  tomato sauce
  • 3/4 cup   water
  • 1 1/2 cups  potato, diced
  • 1/2 cup  celery, chopped
  • 1/2 tsp.  salt
  • 1/8 tsp.   pepper
  • 1/4 tsp.   dried dill weed  

 

In a large saucepan, heat oil and saute' onion until translucent.  Add mushrooms and green pepper, then cook for a further 2 minutes.  Add tomato sauce, water, potato, and celery.  Season with salt, pepper and dill.  Simmer for about 7 minutes until potato is almost done.  Add more water if necessary.  Stir in abalone and cook over low heat for 5 to 10 minutes more or until the abalone is tender. 

Serves 4.
